BBQ Pork Frittata

There are many mundane tasks that take place each and every day, and preparing and eating food is one of them.  Don't get me wrong, I love to eat food.  I just don't always love having to come up with something good to eat; and when I say good I mean tastes real good while at the same time being really good for me.  
That is why Frittata's are one of my favorite go-to meals, especially for lunch when I want something healthy, filling, and yummy.  I love to use leftover BBQ pork, but you can use chicken as well.  The eggs and pork give you great protein to fill you up, the vegetables are exchangeable so you can have whatever veggies suit your fancy depending on the taste and vitamins you are going for.  And the thyme adds just the perfect flavor blend to bring the whole thing together.
One of the best diet tips is to eat protein in every meal.  Web MD explains that "Protein is more satisfying than carbohydrates or fats, and thus may be the new secret weapon in weight control. "Diets higher in protein and moderate in carbs, along with a lifestyle of regular exercise, have an excellent potential to help weight loss," says University of Illinois protein researcher Donald Layman, PhD.  Getting enough protein helps preserve muscle mass and encourages fat burning while keeping you feeling full."
I use broccoli in this particular recipe but like I said earlier you can use whatever vegetables you want, like broccoli, peas, spinach, peppers, tomatoes, the options are endless!  Most of the vegetables you will cook in the frying pan with the oil, in this recipe since I used broccoli, I sped things up by cooking the broccoli in the microwave first.  
This recipe is great because it only takes about 20 minutes and most of that time you aren't doing any cooking because it's in the oven, so after you toss it in the oven, you can go feel productive by doing the dishes, or you can just sit back on the computer and read more of my blog, or even sit on the couch and relax! Then 12-15 minutes later you can enjoy some delicious frittata goodness!  

BBQ Pork Frittatas
1-2 tsp. oil
1/2 cup - 1 cup BBQ pork
1/2 cup - 1 cup broccoli or veggies of choice
2 eggs
2 Tbls. milk
1/2 tsp. thyme
salt & pepper
1/3 cup - 1/2 cup cheese (mozzarella and cheddar are my favorite for this recipe)

1. Preheat oven to 375 degrees.

2. Cook broccoli; to speed things up I use frozen broccoli and cook it in the microwave for 5 minutes in a bowl with some water.


3. Heat oil in frying pan over medium heat.  Add broccoli and meat.  (You are basically just coating the pan with oil to keep everything from sticking as well as heating up the meat since you already cooked the broccoli.  When using other veggies though you will first heat the oil then fry your vegetables in the oil, for example, cooking your spinach until it is wilted.)


4. Combine eggs, milk, thyme, salt, and pepper in a bowl.  

5. Add egg mixture to pan and turn off heat.  


6. Top with cheese.


7. Bake in oven for 12-15 minutes.  

8. Take out and enjoy with more BBQ sauce if desired.
