Healthy Banana Oatmeal and Whole Wheat Pancakes

I love breakfast! Why? Because I love breakfast food! Why? Because it's so delicious! And it doesn't have to be eaten solely for breakfast! I know that German Pancakes is a Sunday evening favorite in this household, and if not then, then usually some other time in the week when I want a simple, yet delicious meal. I'm not, however, discussing German Pancakes today. I'm sharing my Banana Pancakes. These pancakes make up my breakfast almost every day of every week.  I know you shouldn't eat the same thing every day, but I don't care. Because I love these, and they are still healthy for me regardless. Even eating them every day is better than me eating my Lucky Charms every day. Which I'll still do because Lucky Charms are also super good. Besides the point. I make a batch of these pancakes at the beginning of the week and it usually lasts me 3-5 more days depending on if I have to share with my husband or not. He is usually already at work when I make these so I only have to make a couple for me and one for my daughter.  She loves these just as much as me. I have tried and experimented with SO many different whole wheat pancake recipes, trying to find the perfect one.  Most of them came out flat, or flavorless, then finally - these beauties appeared. They are so fluffy, and so yummy, with the perfect amount of banana, and a hint of cinnamon. I'm not hungry, yet I still want one right this instant. I have some batter in the fridge, so I just might...

Banana Oatmeal Whole Wheat Pancakes
1 cup uncooked rolled oats - blended
1 1/4 cups whole wheat flour
1/2 cup all purpose flour
2 Tbls (dark) brown sugar 
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 whole egg
2 cups milk
2 Tbls (olive) oil
1 tsp vanilla
1 banana - blended

1. Blend oats (I use my Ninja).
2. Combine all dry ingredients in a large bowl.
3. Blend banana.
4. Add egg, milk, oil, vanilla, and banana to dry ingredients. Stir until smooth. No further blending is necessary, everything will mix fine with a fork or spoon.
5. Cook in a frying pan or on a griddle and top with butter, syrup, and maybe even more bananas...
and enjoy the absolute perfection that is these pancakes!
