Quinoa and Teriyaki Pork Lettuce Wraps with PF Changs Sauce

I love lettuce wraps. I feel so good after eating them (even if I eat five). And the quinoa adds a superfood to the table. This may seem like a complicated meal, but it's actually quite simple. Majority of it can be done beforehand, resulting in dinnertime being much less stressful. The pork is cooked in the slow cooker, the sauce is made prior as well and placed in the fridge, the lettuce only takes seconds to pull the leaves apart and wash and can be done at any time, leaving only the quinoa to cook at dinner time (which I tend to cook in my rice cooker resulting in another thing to not have to think too much about).

Lettuce Wraps Ingredients:
Lettuce
Pork
2 lb pork roast
2 tsp olive oil
1/2 cup teriyaki sauce
1 cup chicken broth
1/8-1/4 cup brown sugar
4 tsp minced garlic
1/4 tsp pepper
salt
Quinoa
1/2 cup quinoa
1 cup chicken broth/water
1. Place pork in slow cooker with a little bit of oil on the bottom.
2. Combine pork marinade ingredients and pour over pork.
3. Cook on high for 4 hours.
4. Mince carrots and add to sauce in the slow cooker for the last hour of cooking.
5. Cook quinoa according to package directions during the last 15-20 minutes of porks cooking time.
6. Wash and pull apart lettuce.
7. Shred pork.
8. Drain liquid from carrots and mix carrots in with the quinoa when it's done. Drain liquid into a bowl so you can add the sauce back in with the shredded pork. If you have time cook the shredded pork for another 30 min - 1 hour with sauce to allow it to soak in. This isn't absolutely necessary though.
PF Changs Sauce
1/4 cup sugar
1/2 cup water
2 Tbls soy sauce
2 Tbls rice wine vinegar
2 Tbls ketchup
1 Tbls lemon juice
1/8 tsp sesame oil
1 Tbls dijon mustard
2 tsp water
1-2 tsp garlic
1. Dissolve sugar in water
2. Add soy sauce, vinegar, ketchup, lemon juice, and sesame oil. Stir until smooth.
3. Refrigerate
4. Right before eating, add mustard, water, and garlic.
Place some shredded pork and some quinoa mixture into each lettuce piece, pour some PF Changs sauce over the wrap, and eat the delicious asian mess!
